i know also xenosaga JP and kingdom hearts JP. if i'm not wrong also ffx2 JP

The FAQ section of the guide in my signature lists a lot of them, but most are only the Japanese versions. SCEA was in the habit, and still seems to be, of forcing removal of HDD support from games during localization for our region. Also note, my list isn't complete, and I haven't actually been too motivated to do an update for a while. I mainly update when PSBBN gets updated, since it's easier for me to add all the info at once.
I know I'm missing Net de Bomberman and Pop'n Taisen Puzzle-dama Online (both require the HDD to play) from that list, and probably the King of Collisseum games. Front Mission Online also starts beta testing in Japan in 4 days, and will require the HDD.

Most of these games only have HDD support in Japan, if they were ever released outside of Japan. Also, it seems that all of the ESPN 2k5 sports games released in North America have HDD support, but as I don't play sports games, I don't know all of the details. I've heard they don't need a Memory Card if you have a HDD...
The most common form of HDD support in Japan is partial installation to decrease load times. The next most common form of support is as a valid location for save files, meaning no Memory Card is required. The least common form I have seen (in only 1-2 games, only one that I know the title of) is custom soundtracks by using audio ripped to the HDD as PCM from an audio CD.
