You just include a dummy eboot.bin in the same folder as eboot.pbp then remove it after install.

Don't hold your breath though, it didn't work when I went through the prices of packing the pbp etc and inserting to package. If you used a deconstructed psn package you can successfully rebuild it with a different iso image inside (according to some shoddy reports at ps3***.com) but I would only get black screens when using this method or 800*** errors. I'll go into it a little more in your ps1 thread.
