Unjailbreak (restore) and upgrade: any risks?

Hi everyone, I have a PS3 slim with original firmware 3.41. I've been using a dongle for almost a year which allowed me to play a dozen of games... but now I would like to erase all these games, upgrade legally the firmware and I don't want to use the dongle anymore.
My questions are:
1) Should I format the hdd and will I need to uninstall Backup manager and FTP manually?
2) Are the actions above enough to have my PS3 go back as being original non jailbroken?
3) Will it be then safe to upgrade without getting banned by Sony?

1)If you're upgrading to OFW so format HDD for more safety
2)Yes they're enough
3)unless u got banned on the DNS and F*ck PSN era then you're safe to go and I don't think you'll be banned
