I am wondering if I switch my internal hard drive with a newer(more memory) one, will all of my backups still be on the old one, so if I wanted to play a game on the old one, I would just have to put it in and play it.

I don't really see why not.
If you go with a bigger drive though, why not just go with the biggest one you can get and transfer your backups to it?
Do that and you wouldn't have to worry about swapping drives any more.
You could also put the old drive into an external case and just use it as a usb drive (that's what I've been thinking about doing if/when I run out of space on the 500 gig that I'm running right now). You might need to open your options.ini file and have it point to the folder on the external, but that's not a big deal at all.
Yes your backups will still be on it but you won't be able to access them as the drive is encrypted, and if you put it back in the ps3 after installing a different drive the ps3 will tell you it needs formating and if you stick it in an external case it won't detect it.
