If you can't get the cable from the PS2Linux set, you could also make your own. It's just a matter of connecting a component (Red, green and blue lines) cable to the R,G,B pins of a 15-pin VGA connector. You can then use a software like GSM to force software to use the VGA modes instead of NTSC or PAL.

The PS2's hardware is amazing. It even can go up to 1080P with a bit of hackery. The only thing it can't do is to have high-resolution textures or a full-size frame buffer at that resolution, due to a lack of VRAM.
