A junk board would definitely be the best place to hone your skills, but if you can't get a PS2 mobo to practice on, get a relatively new video card or PC motherboard. I initially practiced on a Trident 4MB video card which had chip legs and points that were a whole lot bigger than the ones you'll see on a PS2 motherboard so imagine my surprise when I finally got around to opening the PS2.

and yes the hhd, lan and d0 were a pain in the ass, as well i have the 1.6 board so i had to manually rebuild the lpc

well you can find in the venders section people who could take care of the installs for you. i personally deal with loy hes the best and pretty cheap to.

If you have experience rebuilding a 1.6's LPC as well as some patience, then you should do alright with a PS2. Just use thinner solder with the AWG30 wire, and ensure each end is making good contact. The Xbox is seemingly bulletproof to modding, but the PS2 is like a rape victim in a mosh pit.
