OK, I just bought a 5.1 Audio System, it has 6 plugs (3 red, 3 white) now, how can I make it so my PS2 outputs to this audio? Is there a 5.1 to Optical converter so I can plug it directly to the PS2? I have no clue what to do.

you need to buy so-called "reciever" (sry, english isn't my mother tongue) which will accept optical signal (from ps2) and will produce signal for your speakers. These devices are very common when you buy a "home cinema kit", so you may already have it.
It came with a DVD player, that has the 5.1 audio connection, optical, compsite, s-video, and coaxial.

So I just buy a Optical Audio cable, connect one end to the back of my PS2, and the other end to my DVD Player/Reciever and the audio should output from the PS2 to the 5.1 audio system? Correct?

It doesn't say anything about optical input, so my guess would be that it doesn't support 5.1 audio from the ps2.
