Modding the Fight Night Champion demo to last more than 3 rounds?

Just out of curiosity, any idea whether this would be possible?

I would think not, due to the fact we don't have the ability to decrypt npdrm eboots (most eboots that you get from psn) so it would not be easy to mod.

Then the EBOOT.BIN inside the pkg download from the store is crypted with npdrm , while the EBOOT.BIN on the bluray game is possible to decrypt with unself ?

Generally, yes, npdrm is for stuff from PSN, and most games disc are not so you can unself them.
