rpghead here, no specific order of listing.

games that i turn my ps3 on for are as follows :

resonance of fate
disgaea 3 (if you don't mind the 2d graphics and excessive grinding. i still think psp is the perfect hardware to run this on, not stationary consoles)
eternal sonata
vanquish - only if your ps3 runs quietly. it makes my fat ps3 to jump to max fan speed after ~20 minutes of gameplay.
star ocean 4
uncharted 2
mgs4
bayonetta - if you can run it off hdd load times become much more bearable.
fallout 3 - you might consider it, but pc version has tons of mods.

Seriously, you can play these 2 games forever and probably still not do everything they offer.
