Upgrading the HDD on a CFW 60GB model? –

I know there is a lot of talk about upgrading the HDD on a PS3, but almost every thread I Googled was about people who have a PS3 that has the smaller NAND which stores most of the firmware on the HDD (and thus, needs the firmware update file to replace the HDD) that they need to switch back to OFW first.
I have a 60GB model, so then all the firmware is stored on the NAND right? (At least when I upgraded the original 60GB hdd to 250 it never asked for a update file). So then can I just upgrade the HDD and not worry about having to mess with anything on my firmware
And if so, will using the official system backup also backup my homebrew and installed disk games? I know it doesn't backup trophies and anything on the OtherOS partition, but other than that does it backup everything else? (I guess I will have to give up the OtherOS partition, oh well).
I was surprised to find out that there are 1TB 2.5 SATA drives for under $100 now that are 9.5mm, so since I am running out of space, I wanted to upgrade.
... also, is there any way to unlock/unencrypt the old and/or new drive or extract the keys to do so in case anything happens to the PS3 so I can still get my data off the drive or key it to a new PS3 instead of having to format the drive and lose everything?
