I am in no way a legal expert but from what I've gathered in most EU countries EULAs mostly contain 90% rubbish which will not hold in courts. It's not the EULAs however that are even the problem, it's any DMCA-like laws that are the problem. Many countries do have various laws regarding breaking encryption methods and such, even on legally-bought devices.
To what extent such DMCA-like laws prohibit things is very dependant on the country of residence and you should ask your local authorities about those.
