How to properly turn off your HDD? –
On windows theres no problem, external HDD are set to "optimized for quick removal" on default, and you can unplug it on remove hadware aswell, but what happens on your PS3? i think i busted an HDD from constantly turning it on and off (cheap enclosure lost signal for no reason), do you turn it off only when the ps3 is off? only when not reading/writing lights are blinking?. I want to be very careful so i dont end up with another dead HDD, so any advice would come in handy.
I usually wait until device is completely powered off, (except for Windows and Linux machines) then power down the hard drive.

Disconnecting it should be fine at any time so long as it is not doing any writes. To be safe, I would only disconnect when the activity light is not flashing, or even safer, when the PS3 is powered down.
