I put a 1TB 2.5" 12.5mm drive in my PS3 Slim 160GB, here's how:
1) Take off drive cover.
2) Pull drive and drive cage out.
3) Insert new 1TB drive directly into slot with no cage.
4) Put a bit of foam (weather stripping works well) or other squishy but firm substance on the end or side of the drive if it makes you feel better.
5) Reinstall cover.
And that's it. It fits perfect, works perfect, and is even easier and faster than replacing a 9.5mm drive with another 9.5. I can't figure out why everyone claims you have to hack the top off of the drive cage, because you don't!

No thermal issues so far. I only put a piece of weather stripping between the end of the drive and the plastic slot cover. So really it has at least as much room to breathe as it does surrounded by a drive cage. I can't see any way in which thermal issues could occur.
I can't comment on the load times really. This is the only PS3 I've really played, and I put the 1TB drive in it right after I bought it. I played Drake 2 maybe an hour on the original drive. I didn't notice any difference.
Usually a larger drive is faster, not slower, but this is a 5400 rpm drive not a 7200. I'm running a Samsung SpinPoint MT2 and I'd say the load times are fine. They are slower than my PC (i7-970, 5870, 160GB Intel SSD) but probably faster than my xbox elite.

good thing because I believe the original was and they say the 7200 could cause overheating issues

HDD is far away from the motherboard, there is big blu ray drive on top of it. Shouldn't cause problems.

How long did it take you to format. Mine gets stuck at 99% (no read access light in front of the slim)?
