I posted the 555 timer 50% fan mod 2 and a half years ago. I've never heard of any fan burning up from running fast. There is absolutely no reason to worry about hurting the fan. The stock target temperature is around 75C. We know this temperature is a BGA killer. We know the EDRAMs are not monitored and can be 5-10C hotter than the GPU core. This means you can't trust even 65C on the RSX to be safe. Hell, I've seen 360 Falcons that run at 65C GPU's under load fail and need reflowing. Replacing thermal paste is great but no matter what you use is not going to give you a 15-20C drop in temps like modifying the fan speed will.
Also the PS3 heat spreaders can be a nightmare to pop off. You're only replacing half the paste if you don't remove them. I can usually pop the RSX but the CPU is a real bugger. I've got one here that has to be replaced for sure and it looks like I'll have to take the dremel and cut it off because I've pried as hard as I dare.
Oh BTW, the target temperatures of the launch Xbox 360 in 2005 were hilarious: EDRAM 110C! GPU 100C! CPU 80C.
That's not the shutdown, that's just when to increase the fan!
And the EDRAM was usually the hottest spot in the box.
