I know I'm a bit late on this, but I wanted to post what worked for me just in case there are people still searching (as I was). I'm not a real tech-savvy person at all, just experimented with this and got it to work. It hung on the pink screen for me as well with the patched version of Burnout.
Just burn off 2 versions of Burnout Dominator - one of them being the patched version and the other one being unpatched. ESR will only read the patched version initially, so boot up your console with that one inside. Right when you're ready to go, hit X and do a hot swap with the discs (I have the fat version of the ps2 with the top cover off) so that you're playing with the unpatched version... it should load up just fine, and worked for me on the very first try. Be careful with the discs though as they're spinning

Wow, it seems like the whole series (or at least the later two Burnouts) work the same way. I had to, again (as with Dominator), burn two copies of Burnout Revenge just to get the FMV's to not glitch up entirely and ruin the game. The turbo boost screens would alternate between freezing (even though I could hit the start button, toggle settings, and all the menus still worked fine) and stuttering so bad that I couldn't even pick a car and start a race. I'm sticking to my hotswapping rule with Burnout games from now on.
