I don't think it will let you, just say the 3.72 update is newer than the old etc.

You can't unless you do some hardware modification. I've never done progskeet or used any of the downgrade dongles but you need additional hardware. My understanding is that they don't work on the latest console but do some research if you want to try it. My suggestion would be to try and trade it for a system on a lower firmware. Try pawn shops. You might have to throw them a little cash just for processing the paperwork, but it's less headache than soldering additional hardware on your current ps3.
