You don't need the whole home folder just the savegame one inside it, then you need to go into recovery mode and rebuild file system/database otherwise the saves will not show up

Why don't you just use the backup utility?

I would personly backup The entire home folder fomr the Old HDD

On the New HDD Crate a USER NAME THE EXCATE SAME AS THE OLD ONE
Then REPLACE THE NEW HOME FOLDER WITH THE OLDER HOME FOLDER VIA FTP/USB

Once REPLACED RIGHT AWAY SHUT DOWN THE PS3 (DO NOT EXIT THE FTP/FILE MANGER On PS3)

once shut down restart into recovery mode....
    Run REBUILD DataBase

    wall-la your done..

YOU HAVE TO REBUILD THE DATABASE BEFORE USEING THE HOME FOLDER (AFTER YOU REPLACED IT) OR YOU WILL CRASH THE SYSTEM
