Since there is no JB or downgrade path, Is there any point on staying with 3.56 or should one just move to 3.60 and enjoy online play?

We do not know if and when a new "Jailbreak" will be out. There could be a breakthrough with 3.56, that allows for CFW. Or, there could be a braskthrough with 3.60, that allows for CFW. We just do not know yet.

Update. You're already halfway there anyway.
Unless you're dying to use PSN I'd wait. 3.60 will probably be jailbroken at some point but if 3.56 is jailbroken first you can enjoy it until a jailbreak comes out for 3.60.
I would update. I updated today. I don't use PSN and when I had it jailbroken I didn't use backup manager. I was hoping and waiting for that app like xbmc. I buy and play all the disc I have and it seems the scene focus is backup managers which I could careless about.
I bought crysis for the ps3 and couldn't play it so I bought another copy for xbox to enjoy and waiting for that killer app and missing out on some of the great games didn't seem to be beneficial. I'll scoop up an exploitable console later if the homebrew scene gets better with some of the emulators and an kick ass media center app.
Update. The next CFW would be most likely be on 3.6 since 3.56 isn't any new keys or sdk.
