As title says, is the 2.5" or 3.5" more stable for backup and play purpose? The 2.5" uses power from ps3 while the 3.5" has AC adapter.

I use a 2.5" and it works fine. I got it for Wii use originally and chose it because it was convenient; taking up less space and not needing a power supply. Plus when I want to take it from the PS3 to the Wii or from either of those to the PC, or to a friends house, it if fits in my jacket pocket.
-I'll go for 3.5" since it has a larger capacity (up to 3TB) as compare to 2.5", so if you're considering the capacity of the HDD go for the 3.5".
-3.5" is kind a cheaper than its 2.5" counterpart...
*Yeah 3.5" most of the time need AC Adaptor but in my case its not a problem since my 3.5" is exclusively dedicated for my PS3 so theres no need to bring it all the time...
