I read that they have the USB stick thing to jailbreak your PS3 but I got a question I hope can be answered....I think I misunderstand the purpose of jailbreaking my PS3...I think once its done with that USB thing then I can play games from a usb stick is that correct?

No, the purpose of jailbreaking the PS3 is to allow it to run unsigned code for homebrew and things of that nature. You can use a program called backup manager to backup games you own to the internal HD or to a external USB drive formatted to FAT32. I suppose it may be possible to run a game from a USB stick if you had one that was large enough. But I dont know that for sure.

There are basically two versions of the jailbreak for every device that can currently run the exploit. Usually when a Dev pops out with a new port to a new device, they disable backup manager from working. This is so they can avoid any legal problems that could arise from this kind of activity. But it has been the norm that, others pick up where the Dev left off and re-enable backup manager so that it can work again.
So basically you have two versions to choose from at any given time depending on which device you chose to run the exploit on. For example, I hear that the backup manager has not been able to be re-enabled on the Iphone yet for technical reasons. But for most other devices, backup manager has been successfully re-enabled.
So to answer your question, "If this can't play backups of PS3 games what can you use to do that?" You can run whats called homebrew. Homebrew is any games, apps, ect that was NOT created by Sony and runs on the PS3. Because homebrew is not created by Sony, it does not have the required security signatures that's needed to be able to run on the system, hence the jailbreak.
Currently there is very limited homebrew for the PS3 out there. One because most Dev's have little to no experience on coding for the PS3 since the PS3 was not hacked to this degree for so long (approximately 4 years). There is however an FTP (homebrew) program out now that you can use to gain access to the internal hard drive of the PS3. With it, you have the ability to save and transfer games to and from your computers harddrive and all sorts of other cool stuff that are being discovered daily.
For example, changing a games settings to make it play remotely on your PSP even if it didn't have that option to begin with by simply changing an option on a file called PARAM.SFO (check out this thread) (Use 'Remote Play' on any PS3 Game Title!)Use 'Remote Play' on any PS3 Game Title!. This file would not have been accessible if it weren't for the FTP homebrew App.
There is also A current WIP (work in progress) port of NullDC (Sega's dream cast) and PSX2 (PlayStation 2) emulators being done to work on the PS3 as well.
The possibility's are only limited by your imagination, (and sometimes the hardware itself) of what you can and cant do once your running the exploit, with or without backup manager enabled.
