New to the PS3 JB scene, could use some advice.

So I have owned a PS3 before, but that was way back when it first came out, I bought 2 and sold one one online for 1100 to buy an HDTV. Anyways, I sold it because it didn't get any use, my 360 got way more use. I love the 360, and I still have it, and most of the games that are multiplatform I enjoy on the 360.
But there are a few things about the PS3 I really want now. It's been about 4 years since I sold my Ps3, and a lot of great games have come out. Also, PS3 is the only device which allows 1080p streaming via Netflix, which bothers the hell out of me. And I just bought a 40 inch LED Sony Google TV, so I wouldn't mind having the Bluray. I already have a Boxee Box, which is a media player device which allows me to connect my external HD, it searches for all my video files, organizes, identifies and sorts them into a Netflix like format, and it does 1080p, so I don't NEED Bluray, because I can download them.
But I recently bought a Wii and learned how to softmod it, and I found out that it was rather easy, a lot easier than I expected, no opening the system up. I remember back in the day to mod a system you had to open it. So I'm not new to JBing in general, I've done it with my iPhone, iPad, and Softmodded my Wii.
My questions pertain to this: since I don't own a PS3 now, which firmware should I try and get if I want to JB? Also, if I have an older firmware, does that keep me from playing online or being online at all, or keep you from playing newer games that might require you to update? The reason I ask is I found some used ones online that are older firmwares and jailbroken already, so I was thinking about buying one, I just want to know which firmware is best.
Also, can I use an external HD to store the games? I don't have a Bluray Disc burner and would have to use an external HD. I have a 320 for my Wii (but those games are like 4 gigs max), and a 2TB for my videos (which is 1.7 filles with videos). So I would probably buy another 2TB, maybe 3.
So what is the best route for someone who hasn't bought a system yet? The main things I want to be able to do is play games off of an external HD (any game, I don't want to be constrained), and actually, that's it as far as JBing goes.

You will have internet access, but not PSN so no netflix
you can play games from internal drive or external drive
You do not need a BluRay burner at all
You need a usb stick/drive to do the install of custom firmware - that's it, nothing else
You can't play games newer than Portal 2 without a True Blue dongle (about 60 bucks - currently gives access to about 90 of the newest games and they add new ones every couple weeks) with the exception of the occasional patched game because of new encryptions
