If I jailbreak my ps3 with a nokia n900 and late on buy an USB dongle (such as PS3jailbreak USB-Groove) will I just be able to use the dongle instead of the phone or do i have to repeat the jailbreak or something?

Once you have your dongle, be sure to flash it with the latest version of PSGroove then just switch to using the dongle instead of the phone.
There is no special hand over process.
