No you're not forced to update when upgrading your hard drive. Just keep on CFW 3.55 and you'll be fine restoring your backup settings. You do need an external hard drive to backup your PS3 to though.
People keep on repeating here that you don't need to update, but please do refer to post no. 13 with the screenshot. The guy who followed the instructions is forced to go through the update procedure (same version at least) before the system allowed to format the new drive.
