I don't have a PS3, but with all the news about jailbreaking finally possible (this time it's for real right?) I want to get one. My brother has one I might buy.
Can any firmware be modded or is there an evil update? If I jailbreak can I get Other OS Back? If I get a slim could I get Other OS, or is Other OS impossible even with a jailbreak?
I'll figure out what I can myself, but I don't even have a PS3 yet to know too much, so I just need to know if any PS3 will work or if I need a certain firmware...

As long as you do NOT buy a USED PS3 that someone has updated to OFW 3.56...you are golden. Now to get Other OS support you will have to downgrade...the trade off is...I believe...but could be wrong, you will not be able to play the newest PS3 games.

Doing my best to answer, but Im also a noob, so hopefully someone will correct me where Im wrong.
If you buy a new PS3 today DO NOT go on PSN. It wants to update if you do. The current firmware (official) is 3.56. This firmware is currently not jailbreakable. I just got a new slim about 2 weeks ago now and the firmware out of the box was 3.20 or something very similar. You will likely will get something similar, but probably no higher than 3.40 out of the box. Anything below 3.56 is breakable. First think you should do when you fire up the new PS3 is turn autoupdates off and DO NOT go online until there is a new CFW or there is a new workaround.
KMeaw 3.55 custom firmware is fantastic on a slim. I have had no problems and jailbreaking it took minutes. I literally set up my PS3, jailbroke it, and was on backups in 15 minutes flat. Research everything. Learn what apps you need to get backups running (I suggest Multiman) and the various options you have in respect to homebrew.
Other OS has apparently made a return via jailbreaking. I dont care about this feature, so its useless to me, but I believe that there is a way to have it reinstituted on any PS3, including a slim. However, this is a new discovery, so I cant speak for the stability of it, or if its even 100% true.

You will NOT be able to downgrade to 3.15 on a Slim, the trick about downgrading is, you can't downgrade further than the machine originally came with…..so if its a Slim, the oldest firmware it ever had was 3.21 and that's when OtherOS was removed. However, devs have gotten Linux on 3.55 even….so if you want to use Linux, you can flash to Kmeaw 3.55 and use AsbestOS

So if I have AsbestOS I don't need OtherOS? So could I still run Linux on a slim with AsbestOS?
Would AsbestOS be better than other OS because $ony's Other OS has a limited GFX driver?

ok, I think oholio is mostly correct but I believe you need to download and install (manually through usb) official firmware 3.55 BEFORE you install custom firmware.
What I recommend (if you want backups and OtherOS):
1. Download and install OFW 3.55
2. Download and install Kmeaw CFW 3.55
3. Download and install Multiman (1.15 I think) for backups
-or alternatively install Gaia Manager
4. Search for a guide to installing AsbestOS or wait for an easier solution for linux (OtherOS)
You can also install other homebrew such as Blackbox FTP, Comgenie's File Manager, or various emulators and run them straight from the XMB.
Edit: OtherOS (as of now) has not been restored to the XMB as it was but AsbestOS is supposed to be a replacement or alternative to OtherOS. Basically AsbestOS does the same thing, lets you install linux. Graf_chokolo is also working on an alternative to OtherOS that allows full access to the PS3 hardware thus bypassing the hypervisor which limited access to the system. The implications of this would be better utilization of the hardware (i.e. HD video, native linux emulators/games, XBMC)

Is there anything a Phat can do that a slim can't or anything a slim can do that a phat cannot?

The first models of the phat are backwards compatible with PS2 games and have more usb ports and an SD memory card slot (I think... or it may be Memory Stick, idk). You could check the PS3 wikipedia article for more details (I'm too lazy).
If you don't care about those things then just get a slim. Custom firmware, homebrew, and AsbestOS work exactly the same on all models as far as I know. (Just don't install Waninkoko v1 on a phat unless you want a brick)

None. There is almost no chance as its so new. The latest firmware out of the box on the machine that anyone is reporting is 3.50 and even that is rare to find out of the box. I got my slim 2 weeks ago and it was 3.21 or whatever the launch firmware for a slim was.
I wouldnt worry about seeing anything non-breakable out of a box for months.
