Now I'm in Hermes CFW 3.41. If I want to go back to OFW 3.41, can I just use the recovery menu in Hermes CFW to install the original OFW 3.41 directly ?
Even more confusing :
-Do I need a modified 3.41 PUP or just use an original 3.41 OFW from SONY?
-While searching for 3.41 firmwareI've found a modified 3.41(3.56) ? <-- what does this mean anyway??

Yes, you have the procedure down correctly. Just boot into Recovery Mode, use the official 3.41 firmware, and update to that. Do NOT use service mode, you don't need it. Just plain old recovery mode. To answer your other question, when the downgrade was originally released, the team also released a modified 3.41 file to help downgrade from 3.42 and 3.50. Not everyone needed to use this to downgrade successfully. When Sony released 3.55, they made some changes so we couldn't use the same PUP and lv2diag files to downgrade from 3.55 to 3.41 or below. There is a post on this site where a lot of people had discussion on it, and it eventually led to a new modified 3.41 file and lv2diag file, which in simple terms, is firmware 3.41 labeled as 3.56 to get around some issues in the downgrade process. Users would use that modified firmware to downgrade to 3.41, than downgrade to the official 3.41 to avoid any issues with the re-badged firmware. With the release of 3.56, Sony changed some of the keys used in the downgrade process, and without these keys, we cannot get out of Service Mode on 3.56. If you boot into 3.56, you're stuck there for the time being.
I tried to explain the modified PUPs in a simple manner, as it should get the point across. If you want a more technical, accurate explanation of them, you can find the forum post for the modified lv2diag file and PUPs. But again to clarify, you do not need service mode, and you do not need a modified PUP. Boot into recovery mode (Service mode uses the dongle), and use the official 3.41 firmware from Sony to restore back to OFW.
