Help using PKG How to needed

I am currently using 3.41 JB, I want to play a few games that require updated EBOOT.BIN (NFS, COD, etc...) I need to know what the steps in making it work. So I have the PKG file and the game on my PC all ready to go but don`t understand the order to make it work? Load and install the PKG, then what do I need to do with the game? delete the "old" EBOOT.BIN? then load/install game on HDD?

Seriously I have searched and googled....I just can`t find the simple answer, (all I have found is how to make PKG`s and talk about using FTP) There must be more then just install the PKG and thats it?
