Your Olimex AVR-USB-162 uses the AT90USB162 chip.
As such, just find a HEX for that. I highly recommend doing what amp suggested and searching the forums. Now you know what chip you're using, getting the right HEX file should be easy.
Backup managers... everyone has their favourites, so hard to give help on that. I personally use Open Manager 2.0-I2 and it's ran everything I've thrown at it. As for payloads, I'd say go with Hermes V4B. You don't need ones fixed for PSN access as Sony managed to patch that.
