the only thing i could see the use of is for may be downgrading to other FW

NO YOU DO NOT NEED THEM ANYMORE, CLOSE PLEASE!
Not now if you have updated, no more use for the dongles, only for downgrading, and not even in that! since the downgrader is not working for 3.55, maybe in the future who knows.
I think your question is 'are we ready to do the jump from 3.41+JB to 3.55CFW?'
I haven't turn on my PS3 since Uncharted 2. I believe its 3.01...would I go from 3.01 to 3.55? then geohot CFW 3.55?

I would hold off on doing updating on your ps3. The CFW are still young, and won't be working at a point where it'd be worth your updating. If you can, just wait a few days, and when a CFW is released and confirmed to be working with homebrew and backup manager, I would go ahead and update. If you happen to have a USB development board, you could jailbreak your 3.01 system to play with while we wait. I believe there is a fork of PL3 that works on 3.01. But honestly, it won't be too long until you can do everything jailbreak users could do on a custom firmware, so best advice would be to continue to be a lurker for a few days, watch the front page news, and you'll know exactly when its time to update.
