Thanks I have read the how to thread, I won't waste anybodies time I will have a right good look before asking a question there's nothing worse than a forum full of the same questions, I want to learn what firmware is and how you guys seem to know all this technical stuff that sony don't want you to know, a multi billion dollar company can't stop guys in there bedroom making their own files etc???
My friend repairs computers I have teamed up with him for some info but even he's having to do some looking into it he said if I jailbreak my ps3 I can't go online to which I replied I doubt these guys would sacrifice online gaming for a few free games and additional software????

LOL, gain more control of your system than Sony offers you, or enjoy a mediocre online offering... hmmm, hard choice. I have a PS3 on 4.21, but I never use it for online play. That's what XBL is for 
It is true, currently CFW (custom firmware) users do not have access to PSN. Sometimes we do, sometimes we don't. Speaking of firmware, it is simply a set of files that updates your PS3. There are Official FirmWares, and Custom FirmWares.
And also, some users have multiple systems (like me), so there really isn't any sacrifice.
Well, feel free to waste our time if it helps you learn some more... that's what we are here for

No offence taken even if intended, well I never use it to go online other than cod to be honest but it's a good laugh when your mates are online,
Anyway I have also found that some people have a switchable system so they can play online and have like you say more control over your system, I am slowly getting there, but still have a totally standard system, I want to be sure I can start and finish it successfuly before starting.

Yes, you are right. Some users can switch between 3.55 CFW and 4.21 OFW easily. They use downgrade devices, such as ProgSkeet and E3 Flasher. Basically, the flasher just flashes the correct firmware to your PS3 that you want. Of course, there is a lot of work to do when you take this route; such as, installing/soldering the flasher, and then learning how to use it. There are people at this website who can install a hardware flasher for you, at a price tough.
Hex files are used for the 3.41 jailbreak, and downgrading. Basically, it is a set of information for the dongle to use.
And brew is what we call creations from scene developers. AKA homebrews.
