I was browsing around the web and found this solution. I havn't tested it, but i'm curious to see if it works.

Source: PS3 Jailbreak Working With Call of Duty: Black Ops - Dukio

As you all might have known the next installment of the Call of Duty series requires you to have PS3 3.50 firmware running in order it to be played. But, a big thanks to MRDOCA, we can now see this running on your glorious Jailbroken PS3 console. Alright, let’s go on with the tutorial how to make this working.
Make sure that you have backed up your files before continuing on this tutorial.

Step 1: First, it is recommended to download the modified files pack which includes the PS3SFOEdit, and modified eboot.bin, you can find it at the end of this article (black ops pack 1.3.zip).

Step 2: After you have download the pack, edit the param.sfo to say it 3.40 with PS3SFOEdit. To do that please make sure that you have already know the path of the game you installed which is in our case is the Call of Duty: Black Ops game. Here are the examples of the path where the param.sfo can be found:

    dev_hdd0/GAME/LAUN12345/BLxxxxx/PS3_GAME/param.sfo
    usbxxx/GAMEZ/BLxxxxx/PS3_GAME/param.sfo

Note: See Step 5 for a better explanation.

Step 3: Now, you need to update the game to the 1.02 version. Try using Another New Software Update and search your game title ID according to your region.
Do not use the wrong update which is different with your region etc as it will result in a black screen.

Step 4: After the update has been finished, put the Eboot which you have downloaded with the pack to the USRDIR folder of your COD game.

Step 5: Find the param.sfo in your PS3_GAME folder and copy it to your PC with FTP. Then, edit it with PS3SFOEdit that have been included in the pack. Click load and choose your param.sfo file. After that, click Advanced Edit. You can see that it says 3.5000 now change it to 3.4000 and click ok. Transfer it back to it’s original place and you are good to go.

Step 6: Alright this is the crucial part, go to /dev_hdd0/mms/db/ and search a file called metadata_db_hdd open it in a hex editor and search 3.50, and change to 3.40.
You must REBOOT your PS3 console before you can call it done.

Congratulations! You can now play your COD in a Jailbroken state, a big thanks to MRDOCA and of course to the ones who has helped him.
