The red light is actually the digital audio OUTPUT stream from the PS2 and it CANNOT be turned off. By selecting "Optical output off" on the console options cause the PS2 to stop sending data to the port, but does not turn the red light off.
It's just that you never noticed it before. The black lid on the front of the connector is there to block that light if there's no cable connected as it could be annoying in a dark room while you're watching a movie. Also, it's there to protect the connection from gathering dust.
If you knocked that door out then you could pop some paper in it or some sticker to block the light out. I honestly only use that output to get the audio from my PS2. The sound is so much better...
If your console is working fine, leave that red light alone (or better get something that can use optical audio and use it, you will like the better sound) lol
