A lot of people have multiple PS2 consoles to use them for testing and reviewing new chips. One reason for having one console for each kind of chip is to continue testing the performance of the chip on a long-term basis, like how the chip performs after being installed for six months.
Also, having different versions of PS2's allows for testing chips for any version or region issues that may be found. Like right now, there is a lot of testing with v8 and v9 consoles to see what changes need to be made to an existing modchip's firmware (like the Messiah 2 v1.31 that is being developed).
