I was interested in hearing how other people are soldering wires to the via points. I was taught to carefully scratch off the protective coating with a sharp, delicate knife. It works ok, but I was wondering if others use different techniques.

That's the best technique and only method. You can't just stick the wire in the hole and tape it.

I use a fibreglass pen for scratching the via, works great and then just solder carefully

Thats the best method actually. Sratching the lacquer with a knife can damage the via and/or the trace if your not very careful. Not only that but the fibergalss pen does a way better job of exposing solderable copper.
